Fact: I love simply delicious AND healthy meals.
There is a food staple in our household that when added to pretty much any type of meat (especially fish and chicken) can make for a simply delicious AND healthy meal. This food staple is Trader Joe’s frozen organic brown rice. Yum.

If you haven’t had it, or heard of it, then let me explain. Trader Joe’s sells pouches of frozen brown (and white) rice that when heated in the microwave for 3 minutes turns into fluffy and tasty rice. It is the perfect compliment to a simply delicious AND healthy meal.
We love the way this rice tastes but beyond that we love the way that it helps us accomplish our goals of eating right without stressing. There are five main ways that it does this…
(1) It is easy to cook. Simply poke a couple of holes into the pouch of frozen rice and put it into the microwave for three minutes and it is ready to eat.
(2) It is cost efficient. A box of this rice, which consists of 3 individual 10 ounce pouches, costs a little under $4. A pouch of rice frequently feeds our family for dinner (as a side dish, not as the full meal). I like to bring a pouch to work for lunch, cook it, and save the leftovers for the rest of the week all I have to bring in addition is a chicken breast or two.
(3) It is good for us. I call it healthy or good for us (I am not a trained professional) because it is a great alternative to other carbs that might normally accompany our chicken and fish meals. It has 160 calories per cup, with only 2% of those calories coming from fat.
(4) It is easily customizable. While we love to eat it just as it is (with the protein of our choice), we also love to spice it up a bit. Adding grilled onions, asparagus, or sauteed mushrooms makes this rice even better.
(5) It is gluten free. Which means that Steph can eat it, and that it always great!
