Trader Joe’s GF & DF Pancakes

Living in the ‘allergy world’ is not as bad as it seems.  Some might disagree with me but I rarely feel like I’m being deprived.  However there are a couple things I miss: everything bagels, pancakes and sourdough bread bowls.  I still haven’t found good gluten-free substitutes for the bagels and sourdough bread bowls (have any suggestions?!) but I have found pretty tasty GF pancakes.

Trader Joe’s is an amazing place.  If you didn’t know that you should probably take a trip over to your local store.  I’m mildly obsessed with the place.  A while back I was chatting with the lady who was ringing me up (they’re always so nice!), I said I was having to eat gluten-free and she asked if I had tried TJ’s frozen pancakes.  Since I hadn’t she picked me up a box and I am SO glad she did.

There are 3 mini-pancakes that come in a pack, with 6 packs in a box.  They’re not only gluten-free but dairy-free as well! That means that both Lizzy and I can enjoy them!

Take them out of the plastic wrapping and pop them in the microwave to defrost.  Then stick them in the toaster for a few minutes.

They come out nice and crispy on the edges and a little soft and mushy  in the middle, just like I like ‘em.  I top them with a little ‘I can’t believe it’s not butter’ and a little bit of Agave syrup. Delish!

I have to be honest and say that I would eat these little guys even if I didn’t have an allergy!

Speaking of which I think they’re calling my name right now……
