The gluten-free life has taken a little getting used to for me. I used to be a bread monster. I’d be the one to eat all the bread out of the basket they place on your table at restaurants. Same with tortillas. Needless to say I was quite sad to learn that I couldn’t indulge myself in those treats anymore.
I’ve searched high and low for some gluten-free items to replace the things I loved so much. I’ve yet to find a great bread but tortillas I’ve got down.
TREDER JOE’S GLUTEN FREE BROWN RICE TORTILLAS
Now obviously they don’t taste just like a regular flour tortilla, but the texture is fine and the taste is good. I’ll take it.
note: I’ve found that if you want the tortilla to bend well for a burrito, heat it in the microwave. If you want crunchy, heat it on the stove.
These bad boys now make up about 60% of my diet. Ok maybe not that much but I do eat them whenever I can. Breakfast, Lunch, Dinner, even Dessert. Here are my favorite ways to eat them:

Breakfast: Egg and Turkey Sausage Burrito
It’s always good to get your protein in the morning. We get these delicious pre-cooked turkey sausage links from Costco, I chop ‘em up and heat them in a pan. Then I toss in some egg beaters. It all goes into a warm tortilla and rolled up into a tasty burrito.
Lunch: Sandwich Wrap
This is perfect for lunch on the go! I spread a little bit of mustard and mayo across the tortilla. Then throw on some turkey, lettuce, tomato, red onion, and pepperoncini’s. Roll it all up and eat! Easy as could be.
Dinner: Southwest Quesadilla
I love my veggies. I make this different every time depending on what we have around, but I always try to include black beans and corn- that’s why I call it southwest :) Sprinkle shredded cheese across the tortilla. Then add black beans, corn, sliced mushrooms, sliced onion and whatever other veggies you have around! Close up the tortilla and heat on a pan. Slice it up and dip in salsa or I like sour cream too.
Dessert: Cinnamon Crunch
Grama Villa has been making these for us since we were little. Everything is the same, minus the GF part :) Heat up a tortilla on the stove. When it’s nice and toasty pull it off and coat with “I can’t believe it’s not butter”. Dust with cinnamon and sugar. Fold it up and eat!

STEPH! I am sitting at my computer eating one of these right now! Mine is just topped with some shredded cheddar and monterey jack- toasted until bubbly and crispy! Have you tried to use these BR Tortillas as a bun for your hamburger? SO DELISH!
