Healthy & Delicious Cucumber Salad

Confession- I eat this several times a week.

It’s my “go-to” because I always have all the ingredients in the house and it’s so light, fresh, quick and easy….SO easy.

What you’ll need:

Cucumber

Tomato

Red Onion

Basil (optional)

Olive Oil

Balsamic Vinegar

Salt & Pepper

Chop up your cucumber, tomato and onion into bite size pieces.  How much of each is up to you.  I weight it heavily on the cucumber end.

If you have basil on hand, roll up a few pieces and slice ‘em up real thin.

Drizzle with a teeny bit of Olive Oil.  The Balsamic is where the yummy taste comes from so add as much as you like. I do about a Tablespoon or so.  And sprinkle with salt & pepper.

Mix it all up and you have a deliciously healthy dish.
