Cinnamon Bun Popcorn

Cinnamon Bun Popcorn – Every bit as glorious as it sounds.

Another Pinterest inspiration that I had to try.

I will be making this A LOT in the future.

It’s quick and easy and chances are you’ll have all the ingredients on hand.

Your friends will love you for whipping this up :)

Here’s what you’ll need:

12 cups popped popcorn (about 1/2 cup kernels)
1 cup brown sugar
3/4 tsp cinnamon
1/4 cup Karo syrup (or honey makes a good substitution)
1 stick real butter (1/2 cup)
1/2 tsp. baking soda
1 tsp. vanilla

Preheat oven to 250 degrees.

Pop popcorn in an extra large bowl and set aside.

Combine brown sugar and cinnamon in a microwave safe bowl.
Chop butter into chunks and place on top of brown sug/cinnamon mixture.
Pour karo syrup over it all.

Microwave on high for 30 seconds, just to soften butter, then stir to combine.
Put it back in the microwave and heat for 2 minutes more.  Remove and stir.
Cook for 2 more minutes and remove and stir again.
It should be nice and bubbly (and very hot!)

Quickly stir in vanilla and baking soda (Don’t take too long or it will harden!)
It will foam up as you stir, kinda fun!

Pour over popcorn in the large bowl.

Gently stir it all up until it’s nicely coated

Spread popcorn out on foil lined cookie sheet and bake for 30 minutes, stirring it up every 10 minutes.
Let cool and pour into a bowl to serve.
